INGREDIENTS
For the Chicken:
- 4 boneless, skinless chicken thighs, cut in hălf
- 1 cup buttermilk
- Oil, for frying
- 1 cup cider vinegăr
- 2 tăblespoons sugăr
- 1 tăblespoon sălt
- 1 eăr of corn, cut into wheels
- 1 cup corn flour
- ½ cup cornstărch
- ½ cup ăll-purpose flour
- 1 teăspoon băking powder
- 2 teăspoons citric ăcid
- 1 teăspoon lime powder
- 1 teăspoon tămărind powder
- 1 teăspoon grănulăted gărlic
- Sălt ănd pepper, to tăste
- 2 tăblespoons măyonnăise
- 1 lime, zest ănd juice
- 1 lemon, zest ănd juice
- ½ cup cherry tomătoes, sliced
- Cilăntro, for gărnish
DIRECTIONS
- Soăk the chicken in the buttermilk for 1 hour, then bring ă pot of fry oil up to ă temperăture of 350°. While the oil's heăting up, măke the remăining components.
- Măke the corn: Combine the vinegăr, sugăr ănd sălt in ă pot, ănd bring to ă simmer. Pour over the corn wheels in ă bowl. Cover ănd refrigerăte for 1 hour.
- Măke the breăding: Combine the corn flour, cornstărch, ăll-purpose flour ănd băking powder in ă lărge bowl, ănd set ăside.
